Chile Chicken Enchilada's

1 can Chicken (rinsed)
1 cup Cottage Cheese
2 oz. Chedder Cheese (shredded)
1/4 cup pickled Jalapeno's 
2.25 oz. can sliced Black Olives
1/4 of a large onion (chopped)
6 whole wheat flour tortillas*
1 can Green Chile Enchilada Sauce (pictured below)

Step 1: In a large mixing bowl combine chicken, cottage cheese, 1oz chedder cheese, jalapeno, 2 olives and onion
Step 2: Add a couple spoonfuls of enchilada sauce to the bottom of a casserole dish
Step 3: Add about a 1/6 of the chicken mixture to each of the tortilla's, roll up and add to the casserole dish
Step 4: Top the enchiladas with about 1/2 of the can of enchilada sauce
Step 5: Sprinkle with the rest of the cheddar cheese and garnish with black olives and jalapeno
Step 6: Bake covered at 375 for 20 minutes
