Hawaiian BBQ Pita Pizza


This pizza is AWESOME!! I love making pita pizza's and this one is probably my favorite combo of toppings!!! 

I used this brand of pita's. I found them at Walmart & they are the healthiest ones I have found to date!


INGREDIENTS:
1 Pita  
1oz. Mozzarella cheese 
1oz. Monterey Cheddar cheese
2 tbsp BBQ sauce
2 oz. Cooked Chicken
2 oz. Diced Pineapple
1/2 cup Sliced Onion & Green Pepper

Ok so:
First: Pre-heat oven to 350
Spread 2tbsp. of your favorite BBQ sauce on a pita
Top with 1oz. Shredded Mozzarella Cheese
Add 2oz. of cooked Chicken breast (I used canned)
Add 2oz. diced Pineapple (1/2 of a dole fruit cup)
Place in the oven and cook for 10 minutes
While the pita is cooking saute up some sliced onion & green pepper until tender
Take the Pita out after the 10 minutes and add the onion and peppers and top with 1oz. of Monterey Cheddar cheese 
Place back in the oven and cook until cheese is melted and bubbly!!
ENJOY!!!

Easy Apple Butter (No Sugar Added)

So I came up with this recipe my FIRST time making Apple Butter!! I was kinda playing it by ear and just throwing in ingredients that I thought would taste good...and boy o' boy it turned out delicious!! 
 
Whatcha' need:
 
6 peeled, cored and chopped apples of your choice ( I used tart apples picked from my Mother's yard :P) 
1/4 Cup Stevia
1/2 tsp. Cinnamon
1/4 tsp. Ground Ginger
1/4 tsp. Ground Nutmeg

Toss all ingredients together in a pot.
Place on stove top, cover and cook on low (lowest of the low) for 30minutes (or until very tender/mushy) 
Transfer apples to blender and blend until buttery textured 
Transfer to a airtight jar and refrigerate (good for up to 3 weeks)

Try it on a Turkey Sandwich with some melted cheddar....trust me it is AMAZEBALLS!

Pumpkin Pie ( only 4g of sugar per serving and gluten free crust!)

This is a pumpkin pie with less than 5g of sugar per serving.....say whatttttt!!! :P Yes it is true..and the crust is gluten free for all the people trying to avoid gluten these days!! I was inspired to come up with this recipe because with it being Labor Day, Fall is fast approaching...and it seems I'm starting to crave pumpkin more & more so I figured what better way to celebrate the end of summer than kicking off baking (and pumpkin) season. <3

Ingredients for crust: 
1/2 cup soften butter
1 cup oat flour
1/2 cup oats 
1tsp cinnamon 
 Combine all ingredients in a bowl until crumbled (I just use my hands to combine everything) 
Once combined press into ungreased pie pan. Bake at 350 for 7-10 minutes.

Topping:
1/4 cup chopped walnuts
2 tbsp. Stevia 
2 tbsp. butter (cubed)

Filling: 
2 large eggs
2/3 cup of Stevia sweetener
1 tsp Pumpkin Pie spice
1/2 tsp. salt
1 (15oz.) can Pumpkin
1 1/4 cup unsweetened vanilla Almond milk

In a large bowl, whisk together eggs and almond milk. Whisk in stevia, pumpkin spice and salt. Add pumpkin and whisk until smooth. 

Pour into prepared crust 

Bake at 425 for 15 minutes. Turn oven to 350 and bake for 20 minutes (add topping) return to oven and bake for an additional 15-20 minutes until filling is set and knife comes out clean. Serves 8 

Cool & serve! ENJOY!! 
Calories per serving : 250
Sugar: 4g 
Carbohydrates: 17g

Vita C Juice

This is a great juice to make if you feel like you need a little boost of vitamin C. (which we can all use) The cucumber water will help keep you hydrated while aiding to rid toxins from the body as well. So this juice is a win/win no matter what way you look at it,  and hey! it is yummy too!!
1 cup chunked Cantaloupe
1 large Orange
1 medium Cucumber
Juice all ingredients & enjoy!

Under 100 Calorie Fruit Melody Smoothie

This smoothie and fruity, delicious, packed full of nutrients, and best of all UNDER 100 Calories!!! I highly recommend giving it a try. I actually have one of these as breakfast..and it doubles as a pre-workout meal by drinking it about 45 minutes before I hit the gym!
 What you will need:
1/4 cup Spinach
1/4 cup Water
4 large Strawberries
1 peeled Kiwi
1 peeled and cored Peach
1 teaspoon Stevia sweetener
1 scoop of vanilla protein powder (optional)
5 cubes of ice

1st add the spinach and water to blender and blend until a smooth liquid is formed.

Next add all other ingredients and blend until smooth

ENJOY!
98 Calories (not including protein)

Fat Free Peach Ice Cream Smoothie

Growing up at family functions my grandpa would always make fresh hand churned peach ice cream! It was a staple in my childhood, but these days I do not get the chance to enjoy it as often, so this smoothie is an extra special treat for me (but a super healthy version) and it taste pretty darn close to the real thing!!

Blend together 
1/2 cup 0% fat Greek yogurt (my fav. Is Fage)
4oz. Container of diced peaches in 100% juice 
1 scoop vanilla protein powder 
1 stevia packet 
1/4 cup of water
Around 6-8 cubes of ice
ENJOY!!!!

Calories: 275 Protein: 43g Carbohydrates: 25g Fat: 0g

Blueberry Banana Juice

1/2 Banana 
1/2 Cup fresh Blueberries
1/2 Cup Spinach
1/4 Cup Water
1/4 Avocado 
1/4 Cup Fruit Juice (I used Minute Maid light Fruit Punch)
6-8 Cubes of ice

1.First add water and spinach to blender and blend until smooth
2. Next add banana, blueberry, avocado, fruit juice and top with ice
3. Blend all ingredients until smooth 
ENJOY!!!

Fat Free Ranch Dressing



Whisk together one packet of Hidden Valley Ranch salad dressing mix (I like the buttermilk recipe) with one 17oz. container of Fage 0% Greek yogurt! It taste best after combined and refrigerated for at least 2 hours!! 
This is a great way to enjoy ranch dressing without feeling completely horrible about it!! <3

Apple Grape juice

This is hands down my favorite juice! Ever since childhood I have been in love with grapes and I think that is why this juice is so yummy to me, the grape flavor really takes hold and hides the fact that you threw in some super healthy otherwise bland greens!

Juice the following:
One red delicious apple
1 cup of red grapes
2 large kale leaves 
4 large celery stalks

Skinny Pizza

So for the crust of the skinny pizza you need 1 10" flour tortilla (I used the brand posted below) 
1st pre-heat oven to 350 and bake the tortilla until golden. 
While crust is cooking, in a skillet warm all of your desired toppings. I used sausage, onion, and bell pepper.
Once toppings are warm and crust is ready, top your crust with desired sauce (I used spicy BBQ to try something a little different) traditional pizza sauce will work fine. 
Next add toppings and top with a serving of mozzarella cheese. Return to oven and bake until cheese is melted.((approx. 7 minutes) 
Slice and enjoy!!

Seasoned Apples


This is one of my favorite snacks!! Super healthy and super tasty too!! Perfect for a packed lunch during the week!
Slice one apple,sprinkle with 1/2 teaspoon cinnamon, 1 teaspoon stevia and the juice of 1/2 lemon. Toss apple slices until coated! Enjoy!!

Blueberry Banana Smoothie

1 cup Almond Breeze Almond Coconut milk
1/2 cup fresh or frozen blueberries
1/2 of a banana 
6-8 cubes of ice
1 serving of sweet cream (or vanilla) Protein powder 
Add all ingredients to blender and blend until smooth

Skinny Island Breeze


One sip of this and you are instantly taken to the beach!!! I usually poor out about 3oz. Of the water in a 16oz water bottle replace it with the vodka and then add one packet of sugar free Hawaiian Punch Polar Blast singles to the bottle as well! Shake & Enjoy!!!

Skinny Spinach, Turkey and Veggie Pizza

This pizza is super light and extra filling! 


Ingredients:
For the crust I used the flatbreads pictured below.
1 garlic clove chopped
1 slice Cooked Turkey Bacon (crumbled)
1/4 Squash (thinly sliced)
2oz. part-skim Shredded Cheddar cheese
1/2 cup Arugula
1/4 Sweet onion diced
1/4 Bell Pepper diced
2tbsp. Banana peppers



 Preheat oven to 350 degrees 

Lightly mist each side of the flatbread with cooking oil of choice

Sprinkle with 1/2 of the cheddar cheese and chopped garlic

Bake in oven for 7 minutes

While crust is baking, add the arugula, onion, squash, banana pepper and bell pepper to skillet and cook on medium heat until tender

Top cooked crust with the cooked veggies and crumbled turkey bacon and sprinkle with remaining cheese
