So my sister is a consultant for the new anti-aging line created by the makers of ProActiv, Rodan & Fields. Skinny Mango Passion Fruit Cocktail
Ahhh A match made in cocktail heaven! With only 78 calories per 1.5oz of the new Sorbet Light Mango Passion Fruit Vodka by Smirnoff and only 15 calories per cup in the new Minute Maid Light Mango Passion Fruit Drink, this cocktail is under 100 Calories for 9 1/2 ounces!! Spectacular! I do believe this will be my summer beverage of choice! Ultimate Greek Salad
This is my favorite salad, so I figured I would share it <3
Ingredients (per salad)
2 Cups Spinach
1/2 small Cucumber
1/2 Tomato
2 tbsp. Pickled Banana Peppers
1/4 Sweet Orange Pepper
4 Red Onion rings
1 oz. Feta Cheese
2 Tbsp. of your favorite Vinaigrette dressing
Add spinach to a small bowl. Top with chopped veggies, toss with dressing and PRESTO.. yummy goodness! <3

Veggie Juice
Tropical Cherry Sherbet
If you are having a sweet tooth, opt for something that will not jolt you into "eaters remorse" like this Tropical Cherry Sherbet!! It is super tasty and very satisfying when a sugar craving hits! Cherries are also considered a super-food and packs lots of antioxidants, vitamin A and they also have some anti-inflammatory benefits!
Things you need:
1 Cup Almond Breeze Almond Coconut Milk (or plain will work too!)
2 tbsp. Stevia
1/2 tsp. Pure Vanilla Extract
16oz. Frozen Sweet Cherries
Step 1: Place all ingredients into a high powered blender in the order listed. (I used a Vitamix, but a Ninja, Magic Bullet..etc..should be fine too!)
Step 2: Start the blender on the lowest setting and slowly work up to the highest.
Step 3: After around 1 minute four mounds should form.
Step 4: Stop the machine. Do not over mix.
Step 5: Serve and enjoy!!

Spicy Roasted Carrot Dip
This recipe is so yummy I could eat the whole thing!! It is a fantastic low-carb alternative to bean dips!
Ingredients
1/2 tsp. Cumin
1/4 tsp Ground Cayenne Pepper
8-10 Large Carrots peeled
1/4 cup 0% Greek Yogurt
1/4 cup crumbled Feta Cheese
1 Garlic clove chopped
1 tbsp. Coconut oil
Step 1: Coat peeled carrots with coconut oil and roast in the oven for about 30 minutes
Step 2: Add roasted carrots, cumin, cayenne pepper and yogurt into blender & blend until smooth
Step 3: Transfer dip to serving dish and garnish with the crumbled feta and chopped garlic clove
ENJOY!
* This dip is great with chips, sliced bell pepper or really... anything!

Guiltless Guacamole
Guacamole is one of my favorite snacks!! This recipe I have finalized through trial and error over the years. Super chunky and super Delicious!
Ingredients:
1 ripe Hass Avocado
1/4 of a Red Onion finely chopped
2 tbsp. 0% Greek yogurt
1/2 of a small Tomato diced
1 Garlic clove chopped
Juice of 1/2 a Lemon
Combine all ingredients in a small bowl and enjoy!! I love eating my guiltless guacamole with blue corn with flax chips made by Archer Farms (found at Target)

Chile Chicken Enchilada's
Ingredients:
1 can Chicken (rinsed)
1 cup Cottage Cheese
2 oz. Chedder Cheese (shredded)
1/4 cup pickled Jalapeno's
2.25 oz. can sliced Black Olives
1/4 of a large onion (chopped)
6 whole wheat flour tortillas*
1 can Green Chile Enchilada Sauce (pictured below)
Step 1: In a large mixing bowl combine chicken, cottage cheese, 1oz chedder cheese, jalapeno, 2 oz.black olives and onion
Step 2: Add a couple spoonfuls of enchilada sauce to the bottom of a casserole dish
Step 3: Add about a 1/6 of the chicken mixture to each of the tortilla's, roll up and add to the casserole dish
Step 4: Top the enchiladas with about 1/2 of the can of enchilada sauce
Step 5: Sprinkle with the rest of the cheddar cheese and garnish with black olives and jalapeno
Step 6: Bake covered at 375 for 20 minutes

Naked Pineapple Chicken Burgers
Recipe:
Serves 4

16oz. Ground Chicken (I like Purdue)
2 tbsp. Chopped Cilantro
1 Fresh Pineapple
1/2 tsp. Cayenne pepper
1 tsp. Garlic Powder
1/2 Red Onion chopped
Step 1: Mix chicken, cilantro, cayenne pepper, garlic powder and onion together in a bowl and form into patties.
Step 2: Peel and core the pineapple and cut into 1/4-1/2" thick slices
Step 3: Bake the patties with pineapple on top in a covered dish at 350 for 20-25 minutes or until chicken is cooked through.
Step 4: Enjoy!
{I ate my Naked Pineapple Chicken burger with a side of fresh spinach and black beans} YUMMY!
