This recipe is so yummy I could eat the whole thing!! It is a fantastic low-carb alternative to bean dips!
Ingredients
1/2 tsp. Cumin
1/4 tsp Ground Cayenne Pepper
8-10 Large Carrots peeled
1/4 cup 0% Greek Yogurt
1/4 cup crumbled Feta Cheese
1 Garlic clove chopped
1 tbsp. Coconut oil
Step 1: Coat peeled carrots with coconut oil and roast in the oven for about 30 minutes
Step 2: Add roasted carrots, cumin, cayenne pepper and yogurt into blender & blend until smooth
Step 3: Transfer dip to serving dish and garnish with the crumbled feta and chopped garlic clove
ENJOY!
* This dip is great with chips, sliced bell pepper or really... anything!
